Last night I told Chad that he had to figure out what he wanted for dinner, since I had to go to my math class until 8:30 (by the way, I found out I got a B on my test...I rule) and I didn't want to have to come home and then decide what to make and then go to the grocery store if we needed anything. He picked this recipe : http://www.epicurious.com/recipes/recipe_views/views/106891. This is one of my favorite websites to visit, because I can usually find something yummy and not too Midwestern sounding to eat. I drove home from my class, stopped by Albertson's, and proceeded home to make dinner. It was in the car when I realized that said recipe called for roasted yellow peppers, and that my grill was out of propane.
And ladies and gentlemen, this was my solution. You need one (1) rack from a roasting pan (similar to the one that Chad accidentally stole from the self check-out at Albertson's), two (2) coffee mugs, and one (1) set of tongs. Oh, and a gas burner wouldn't hurt.
I was really afraid that our peppers would taste like, well, gas, but they ended up tasting really yummy. The sandwich wasn't all that great, but I really like the cilantro relish and would recommend using Serrano chilis instead of jalapenos, because they add a little more bite.
